Recipe: Mexican Chicken and Rice Bowl

I would like to keep it simple with a very easy recipe that can be whipped together in minutes: perfect for lunch or dinner. Remember, just because it’s healthy does NOT mean it needs to be fancy! No need to over complicate things. Just go back to the basics. Lean meats, fresh veggies, and good, clean sources of fats and carbs. Easy peasy! This recipe can be used for yourself as a quick meal at the office or for dinner when you are making your family something a little less TTT approved, because let’s face it, sometimes not everyone in your house has the same goals or pallet! 

-4 oz Rotisserie Chicken (preferably natural and/or organic vegetarian fed) – White Meat, skin removed

-Large bed of chopped salad which includes as many greens as you can find (I use a chopped salad in a bag that contains green and red cabbage and kale)

-Fresh Salsa (see pic of my fave)

-Sliced Avocado

-Brown Rice

Now I know it’s no chipotle, BUT we can dream!  Add some lime and cilantro to your rice if you want! Get crazy! I know a lot of us love sauces, but you can find a lot of flavor in fruits and spices. Remember, an all natural salsa is all veggies, just keep an eye out for that sodium intake.
